Spekulatius with dark chocolate

Ingredients
  • 260 g flour
  • ½ tsp baking powder
  • 160 g sugar
  • 125 g grated almonds
  • ½ tsp spekulatius spice
  • ½ tsp vanilla-infused sugar
  • Zest of 1 lemon
  • 110 ml Byodo Baking Oil Classic
  • 10 ml orange juice
  • 15 ml red wine
  • Contents of half a vanilla pod
  • 1 pinch Byodo Sea Salt
Method

Mix all ingredients with a kitchen machine or by hand to produce a dough and leave in the fridge to chill for at least 2 hours. Roll out the dough on a floured surface and cut out biscuits using Christmas cutters. Arrange the biscuits on a tray lined with baking paper and then bake at 180°C for around 12-14 minutes until golden.

Melt the chocolate and oil together in a bain-marie. Then dip half of each biscuit in the chocolate, allow excess to drip off and then leave on baking paper to cool.
