The Azienda of the Pruneti family has been farmed for over a century. It lies in San Polo in Chianti Classico area in the middle of Tuscany. This organic D.O.P. Olive Oil, extra virgin is a special cuvée made from the olive varieties Moraiolo, Frantoio and Leccino.

    Information on production

    All organic byodo oils, frying oils included, are gained through a cold-pressing process, naturally won from the first pressing. These authentic, virgin premium oils are simply filtered after the cold pressing process. The frying oils and mild premium oils are washed in water steam (=deodorized). For Byodo Olive Oil, extra virgin, mild, Italy only first-class olives are pressed. The hand-picked olives are washed first and then cold-pressed at max. 27 °C.

  • The cultivation and processing of the olives for the organic Collezione Andrea Olive Oil exclusively take place in the Chianti Classico area. This is checked on and guaranteed for by the Florentine board of trade. Only after being successfully inspected we are allowed to use the label for protected origin D.O.P (Denominazione di Origine Protetta).
  • Decisive for the top quality of organic Byodo Olive Oils is the fast pressing after harvesting as well as the right timing for the harvest. Every year each producer decides himself - based on his long experience when to harvest which olives.
