    Ingredients

    • rice flour* (50%)
    • maize meal* (49%)
    • sea salt (1%)

    Information on production

    Rice and maize are processed into flour and then mixed with sea salt. In the so-called extruder the mixture is pressed through special dies by means of pressure and heat. This procedure lasts ca. 2-3 seconds. As soon as the rice-corn-mixture contacts with air, the light crisp-bread evolves.

    • 12 slices Byodo Rice & Maize Crisp Bread with Sea Salt
    • 150 g curd
    • 1 cup yoghurt
    • 2 tsp tomato purée
    • 2-3 tbsp mineral water
    • Byodo Atlantic Sea Salt, fine
    • freshly ground pepper
    • paprika powder
    • 1 red bell pepper
    • 1 tin sweet corn
    • 1 onion
    • 250 g carrots
    • 3 eggs
    • 50 g flour
    • 12 tbsp Byodo Frying Oil Olive
    • chive as desired

    crisp bread puffs & dip

    Preparation:

    For dip: Stir low fat curd, yoghurt, tomato purée and mineral water until smooth. Clean, wash and finely dice bell pepper and mix approx.  3/4 of it into dip. Then season with salt, pepper and paprika powder as desired.

    For puffs: Drain sweet maize well in sieve. Peel and finely dice onions. Clean, wash and roughly grate potatoes. Fill crisp bread in freezer bag and finely crumble with rolling pin. Mix onions, sweet corn, carrots, eggs and flour and season with salt and pepper. Finally knead in bread crumbs. Oil a coated pan and heat. Use a table spoon to successively fry 4-5 puffs until golden-brown at medium heat. Then remove from pan and keep warm. Do the same with remaining puff-dough. Finally arrange puffs together with dip and garnish with remaining paprika dices and chive.

    Preparation time: approx. 20 minutes, 4 portions
